Age is only a mental construct used to measure time living. The best time to start is the day you decide to be a more leveled-up version of yourself with no excuses. Knowing the mental and physical benefits of martial arts - jiujitsu in particular - "yesterday" will always be the best answer of when I should've started. For my kids - who can't decide/take action for themselves - jiujitsu has become a non-negotiable part of their lives.
